Angel Hair Aglio Olio with Shrimps

The weekend literally flew by. Cream cheese still sitting pretty in the fridge. Yup, cheesecake didn’t happen. That has to happen soon though. Soon can be tomorrow or next week. Nobody knows, not even yours sincerely. 

The weather is pretty weird right now. I hope God isn’t upset or something because it’s the same almost everywhere apparently? My cousin in Toronto was saying that it is already the fifth day of Spring but it it still snowing. Yup, It’s the first week of spring, and yet many east coasters woke up this morning to freshly fallen snow. I know it happens but I personally find it weird. *Shrugs*  

It has started raining over here in Singapore but it is SO SO hot, its almost not possible for me to live here anymore. Anyone has space for a nice lady that cooks, cleans and bakes? I just need a place that has a temperature that is below 15 degrees celsius at all times.  A small room would suffice as I don’t have much stuffs. Maybe only about 112 suitcases of books and bakeware. In return, you would of course get unlimited supplies of cookies, cakes and cupcakes unconditionally.

My Facebook newsfeed was flooded with enthusiastic people going “Yay it’s raining!” It is so hot, that is not “yay” people. The only good thing that came out of this rain is that, it cleared up the haze. Oh ya, and I get to put on my stylish shades without people judging me. I have been shamelessly wearing my shades every time I went out. Not just those normal shades but a huge one that someone a celebrity would put on to hide away from the paparazzi. Not a slight sense of embarrassment  strutting in that huge shades. I have got few head turns for that and I am gonna keep pretending that those are looks of envy and not mockery. Riya calls it the Kim Kardishan shades. Well I don’t even wanna mention that name. I don’t hate her or anything like that but I just couldn’t get over as to how I spent a couple of hours one fine Saturday watching her wedding. Obviously Riya had a hand in this. You know the energy that goes in watching a wedding. The awws…the wows, the tears and it was all good till 2.5 months later when it was over? WHO gets married for 2 and a half months and file for divorce? Wait till the first wedding anniversary at least? I felt cheated. I am never gonna watch these celebrity weddings anymore. I would rather spend my Saturdays sitting by the window pane, watching the rain while eating a slice of cheesecake. Okay maybe 3 slices. 

Talking about rain, what is the perfect comfort food on a rainy day according to you? I personally love soups. Chicken soup or mushroom soup would be perfect! Pasta is also delicious on a rainy day especially this Angel Hair Aglio Olio with Shrimps. Well who am I kidding? This pasta is perfect ANY day, rain or shine! 

Aglio olio is a traditional pasta dish. This is the easiest pasta dish that is out there. Well loved and it uses ingredients that you pretty much have in your pantry. Pastas are usually really versatile and aglio olio is no different.  I like to add more flavours to my pasta though. In this case, I used prawns and lots of Parmesan. I love to add sundried tomatoes in my aglio olio too. You can make it the traditional way too, with just extra virgin olive oil, chilli flakes and chopped garlic. Either way, it’s yums!

Angel Hair Aglio Olio with Shrimps

Ingredients
  • 1 pound spaghetti
  • 500 g prawns - Shell and devein
  • 6 cloves garlic - minced
  • ¼ cup extra-virgin olive oil
  • ½ teaspoon red pepper flakes
  • 2 tablespoons chopped flat-leaf parsley
  • Freshly grated Parmesan
  • Salt to taste
Instructions
  1. Bring a large pot of cold water to a boil over high heat, then salt it generously. Add the pasta and cook till al-dente for about 8 - 10 minutes.
  2. Reserve ¼ cup of the pasta water.
  3. While the pasta is cooking, combine the garlic and olive oil in a skillet. Fry for 20 seconds.
  4. Add in prawns and cook for a few minutes. Season with some salt.
  5. Mix in angel hair. Season with salt and red pepper flakes.
  6. Add in the pasta water and a good handful of Parmesan cheese.
  7. Remove from heat and top with more Parmesan, chilli flakes and parsley.
