My sleeping patterns have taken a drastic change. I spend the night sleeping in installments. If my sleeping hours were to be made into a movie, it would be a movie with part 1, part 2 and a part 3 (Read: a movie with sequels). I no longer sleep at a stretch, or rather I am not able to sleep at a stretch. Not sure if it’s going to cause any health issues. Guess I would figure it out soon.
The only good thing about waking up early is that, I actually get to eat breakfast. I am not a breakfast kinda person. Yes, yes, I know it is the most important meal of the day and so on, but I do not get to wake up in time for breakfast most of the time (Covers face in embarrassment). I would usually wake up to brunch or just skip that altogether and start with lunch. Now that I have been taking breakfast daily for the past one week, I have noticed that I am not that hungry throughout the day and I do eat less during dinner which is really a good thing.
This is one of the things that I made for breakfast.
It wasn’t a smart thing to write on a chalk label only after pouring the ice cold drink in the mason jar. Lesson learnt. Anyways, Pina Colada (that is what I wrote on the chalk label) is a cocktail made with cream of coconut, pineapple juice and rum. It is the national drink of Puerto Rico. In fact, the National Pina Colada Day is celebrated on the islands each year! Yup, every July 10, this day is recognized by millions across the nation. As I do not consume alcohol, I would usually replace the rum with coconut water and it is deeeelish!
Pina Colada always reminds me of vacation time. Coconut trees, blue beaches, a tall glass of mocktail with a little umbrella and a cherry sitting pretty on the rim. My idea of a vacation. ♥
I am am not even on a vacation, but I made a Pina Colada Smoothie for breakfast and it felt as if I was on one. The power of imagination and a glass of Pina Colada.
Not many of us are used to the coconut + pineapple combo. I was one of those people, till recently.
This smoothie uses, coconut milk, banana, pineapple and yogurt. It is not only delicious and filling, it is healthy too. If you are not a fan of banana, you can drop in a heap tablespoon of quick oats instead. I don’t see why you can’t use protein powder too.
This tropical combination immediately brightens up my morning! I really don’t mind waking up early everyday if I am greeted with a glass of this.
You can either use coconut milk or coconut cream. Coconut milk is thinner and it basically made from a mix of shredded coconut and water, whereas coconut cream is thick and it is a concentrated form of coconut milk.
Needless to say, this Pina Colada Smoothie recipe is awesome! Just one sip will take you to a tropical paradise, even if it’s just in your mind. Now you can actually say that I had a Pina Colada for breakfast. How cool right!
- 1 cups low fat coconut milk or ½ cup coconut cream (if using coconut cream, add an exta ½ cup of pineapple juice)
- 1 cup pineapple juice
- 1 cup pineapple chunks
- ⅔ cup plain yogurt
- 1 large frozen banana (see notes)
- Sugar or agave (optional) - If you want a sweeter smoothie
- Add all ingredients to a blender.
- Blend until completely smooth.
- If it is too thick, add some pineapple juice.
- Serve cold.
- Enjoy!

Hi Suhana. Yes, you can just omit it and make a Pina Colada instead. Only the smoothie uses yogurt. 🙂
