Cooked curry today. I was snapping pics when brother came back for lunch. Since he looks so tired and all. I didn’t want to make him wait while I snap more pics, thus I didn’t get a chance to snap pics of the curry. But its the Potato Masala that I wanna really share. It’s super duper simple and delicious. You can pair with any other vegetables you like. Carrots, corns…etc2. My favourite combo is potato+cauliflower. It’s a very popular dish in India and a lot of North Indian Restaurants in Singapore. It’s known as Aloo/Alu Gobhi. Alu= Potato and Gobhi is cauliflower. Today I paired the potatoes with capsicum coz I didn’t have any cauliflower at home. Nevertheless, it’s still yummy ๐

Indian Styled Potatoes

Ingredients
- 3 Potatoes โ boiled and cubed
- 1 small capsicum/cauliflower โ cut into small pcs
- A pinch of mustard seeds
- A pinch of fennel seeds
- 1 sprig of curry leaves
- 1 onion โ Sliced
- 2 garlic โ chopped
- 1 green chili โ sliced
- ½ tsp turmeric powder.
Instructions
- Add some oil in frying pan and throw in curry leaves.
- Saute onion and garlic for about 1 min and add mustard seeds and fennel seeds and turmeric powder. Add in capsicum and potatoes.
- Season with salt and black pepper/chili flakes.
- Stir fry for 5 mins and serve!
Notes
Feel free to omit the mustard seeds and fennel seeds if you donโt have it coz there are times when I omit these seeds too if they ainโt available and it works just fine.
Besides rice, you can serve this with Chapati and flat-bread.
