Add some oil in frying pan and throw in curry leaves.
Saute onion and garlic for about 1 min and add mustard seeds and fennel seeds and turmeric powder. Add in capsicum and potatoes.
Season with salt and black pepper/chili flakes.
Stir fry for 5 mins and serve!
Notes
Feel free to omit the mustard seeds and fennel seeds if you don’t have it coz there are times when I omit these seeds too if they ain’t available and it works just fine. Besides rice, you can serve this with Chapati and flat-bread.
