Delicious Pumpkin Spice Pancakes

Am I the only one who has not started getting pumpkin-fied as yet? That’s because I am seeing pumpkin recipes popping out from left, right and center, be it on Instagram or Pinterest.

Today I realized something about myself. When I am making something delicious to blog about, while I am photographing and eating the subject, I have a whole blog post ready in my head. I would literally write the post in my head while I am eating it. I just know how to describe the taste of the food while I am at it.

Once I am back on my computer screen, I forgot everything that I wanted to write. Okay, maybe not everything cause I could still remember how good these pancakes tasted!

Delicious Pumpkin Spice Pancakes

So, I have been dreaming of Pumpkin pancakes for about 504 hours now. (That makes it 3 weeks). Finally, I got down to making them today. I almost died. It was food coma. It was phenomenal. It was ah-mazing. It was spellbinding. Can you tell that I loved it crazy? ????

I mean imagine a perfectly spiced fluffy pancake topped with butter and drowned in maple syrup. This is my dream breakfast right here! Or even dinner! I won’t say no to lunch either.

These pancakes were divine and it is such a shame to have it during fall only. I guess it’s time for me to stock up on those canned pumpkins cause I can foresee myself making this very often! Although I made the pancake batter from scratch, FEEL FREE to use ready-made pancakes and I am not even being sarcastic here. All you need to is to add some pumpkin puree and pumpkin spice to the batter.

You can serve these pancakes with a whole lot of stuffs. Examples would be,

Pumpkin Butter

Candied Pecans

Pumpkin whipped cream

I went for the classic, which was butter + maple syrup. It was perfect this way, I would not want to mess with perfection. I did add a dollop of whipped cream and a dash of pumpkin spice for “garnishing purposes” however. Ah, you know the things that a food blogger would do to bring attention to the plate!

These Pumpkin Spice Pancakes are a favorite during fall but these are really good all season round.

Ingredients
Pancakes from scratch
  • 1.5 cups plain flour
  • 0.5 teaspoon salt
  • 1 tablespoon baking powder
  • 2 tablespoons brown sugar
  • ½ cup canned pumpkin puree
  • 1 egg
  • 1 teaspoon vanilla
  • 1¼ - 1⅓ cups milk
  • ¼ teaspoon pumpkin pie spice
Pancakes from premix
  • 1 cup buttermilk pancake mix
  • ½ cup water
  • ½ cup milk
  • ⅓ cup canned pumpkin
  • 1 teaspoon vanilla
  • ⅓ teaspoon pumpkin spice mix
For topping
  • Maple Syrup
  • Butter
  • Whipped cream
Instructions
Pancakes made from scratch
  1. In a large bowl, combine flour, salt, baking powder, and sugar. Stir together and set aside.
  2. In a separate bowl, whisk together pumpkin puree, egg, vanilla, pumpkin pie spice, and milk. Slowly drizzle wet ingredients into dry ingredients, stirring gently with a spoon as you go.
  3. If mixture needs more moisture, splash in a little more milk. Batter should be pourable.
  4. Heat large skillet or griddle over medium-low to low heat.
  5. Spray a heavy griddle with nonstick spray and heat griddle over medium heat and pour a scoop of batter on the skillet.
  6. Wait for a minute or so, then flip to the other side.
  7. Repeat with the remaining batter.
  8. Serve with butter and maple syrup.
For pancake premix
  1. In a medium bowl, whisk pancake mix, water, milk, pumpkin and pumpkin spice mix until just blended.
  2. Spray a heavy griddle with nonstick spray and heat griddle over medium heat and pour a scoop of batter on the skillet.
  3. Wait for a minute or so, then flip to the other side.
  4. Repeat with the remaining batter.
  5. Serve with butter and maple syrup.
