I love tomatoes and sun dried tomatoes are my culinary obsession. That concentrated deliciousness elevates everything. Even a simple aglio e olio gets an instant upgrade with a few chopped sun dried tomatoes. Game changer indeed.
So today I would be sharing this Creamy Sun Dried Tomato Chicken recipe. It is a dish made with only a few ingredients, including a handful of seasonings and herbs that you probably already have in your pantry. That makes it even easier to pull together in a flash. Despite it’s simplicity, these chicken turns out amazing and really flavorful. One of the reason is; the recipe utilizes the flavorful oil from sun-dried tomatoes to brown the chicken pieces, adding depth and aroma to the dish. You can choose to use a whole chicken, cut into manageable eights, or substitute with your favorite cuts like thighs or breasts.

- 1kg chicken (I used a mix of parts)
- 4 tbsp oil from sun dried tomatoes jar
- ½ tsp salt
- ½ tsp Black pepper
- 1 tsp ginger-garlic paste
- ½ cup sun dried tomatoes, cut into strips
- 1 large onion, sliced
- 4 garlic cloves, minced/grated
- 200ml chicken broth/stock
- 150ml thickened/heavy cream
- 1 tsp Dijon mustard
- ½ tsp chili flakes
- A few sprigs of thyme
- Salt and black pepper to season
- 1 cup basil leaves , packed (optional)
- Sprinkle chicken with salt and pepper. Mix in ginger-garlic paste.
- Heat oil from sun dried tomato jar in a large skillet over medium high heat.
- Add the chicken and cook until golden brown on both sides. Remove onto a plate, set aside.
- Add the sliced onion and cook for 2-3 minutes. Add in garlic and cook for another 15 seconds.
- Add in the sundried tomatoes and cook for a minute.
- Pour in chicken broth. Add dijon mustard, thyme, salt, black pepper and chili flakes.
- Mix well and add in chicken. Cook for another 10-15 minutes.
- Mix in cream and cook for another minute or two.
- Stir through basil leaves and remove from heat.
