One Pot Beef Ribs

Hello lovelies. 6 days to go for Christmas and Santa’s around the world must be so busy. I mean that guy sure has a lot to do from wrapping up presents to loading it up the sleigh. He obviously has to go through millions of lists as well. I wonder if he got my Christmas list?

Anyways, I made this One Pot Beef Ribs for my brother and his family who came the other day and these were very well received.

Even though cooking ribs can be time-consuming, yet it is relatively easy to prepare as you basically let it “do it’s own thing” It’s totally up to you, whether you want to cook this over the stove, in the oven or even the slow cooker. It works equally well in the pressure cooker. No matter which method you choose, the end result is going to be a flavorful, delectable, tender pot roast that is finger licking good.

Ribs tend to be quite fatty and therefore this should not be cooked in a lot of oil. I used just one tbsp of oil to saute the aromatics. Once the ribs are done, you can see quite an amount of oil floating on top of the dish. Just take a ladle and discard as much of the oil as you can.

One Pot Beef Ribs

These would be great with creamy polenta or even roasted vegetables by the side. I served these over a bed of my delicious cheesy mashed potatoes. Comfort food at it’s best!

With this One Pot Beef Ribs, weeknight dinners just get easier. You can easily place all the ingredients in a slow cooker and when you get back from a long day at work, a pot of hearty beef ribs will just be waiting for you. No time to make some mash or polenta? Well just serve it with slices of baguette to mop up the gravy. Got to love fuss-free recipes like this one!

Ingredients
  • 2 kgs beef ribs
  • 2 large onion, sliced
  • 6 garlic, minced or grated
  • 2 carrots, diced
  • 1 tbsp minced ginger
  • ½ cup BBQ sauce
  • ¼ cup soy sauce
  • 2 tbsp brown sugar
  • ½ tbsp sesame oil
  • 1 tsp smoked paprika
  • 1 tbsp chili flakes
  • 1 liter beef stock/broth
  • 2 sprigs Thyme
  • 2 sprigs Rosemary
  • Black pepper to season
Instructions
  1. In a large dutch oven, place 1 tbsp of olive oil and saute onions.
  2. Once the onion is translucent, saute ginger and garlic for 1 minute.
  3. Add the beef ribs and cook this for about 5 mins.
  4. Add all the other ingredients and cook this on the stove or in the oven for about 2.5 hours (till the ribs are fork tender) with the lid on.
  5. Once the ribs are cooked, skim fat off the top of the dish.
Notes
If using pressure cooker, cook ribs for about 30 minutes.
