Roasted Garlic Parmesan Potatoes

Ingredients
  

  • 1 kg baby potatoes or small potatoes quartered
  • 2 tablespoons olive oil
  • 6 cloves garlic minced
  • 1/2 tsp mixed herbs
  • 2 sprigs fresh rosemary
  • Salt and freshly ground black pepper to taste
  • 2 tbsp butter
  • 1/4 cup + 2 tbsp shredded parmesan

Method
 

  1. Preheat oven to 180 degrees C.
  2. Line a baking sheet with baking paper
  3. Place potatoes in a single layer onto the baking sheet.
  4. Add olive oil, garlic, mixed herbs, rosemary, 1/4 cup parmesan, salt and black pepper.
  5. Gently toss to combine.
  6. Place into oven and bake for 40-45 or until golden and fork tender.
  7. Once done, stir in butter till well coated and top remaining 2 tbsp of parmesan.
  8. Serve immediately.
