Mussels In Lemon Garlic Butter Sauce

Ingredients
  

  • 500 g mussels
  • 1 tbsp oil
  • 2 tbsp butter
  • 1 onion cubed
  • 4 cloves garlic minced
  • 1/2 tbsp chilli flakes
  • 1 cup chicken stock
  • 1 cup whipping cream
  • 1 lemon zested and juiced
  • Salt and black pepper to taste
  • 1/2 cup Parsley chopped

Method
 

  1. Add oil in a skillet/pot.
  2. Melt the Butter.
  3. Saute the onion for 2 minutes
  4. Add garlic and chilli flakes and cook for another 30 seconds.
  5. Add the chicken stock and simmer for about 5 minutes.
  6. Add the cream and lemon zest.
  7. Season with salt and black pepper.
  8. Mix in the lemon juice.
  9. Add the mussels and cover the skillet.
  10. Let the mussels cook for a few minutes.
  11. Garnish with parsley
