Chicken Caesar Pasta Salad

Ingredients
  

  • For the chicken:
  • 300 g Chicken fillets
  • 1/2 tsp Salt
  • 1/2 tsp Black pepper
  • 1/2 tsp Italian seasoning/Mixed herbs
  • 1 tsp Grated garlic
  • 2 tbsp Olive oil
  • For the Caesar pasts salad:
  • 200 g Penne cooked as per packaging instructions
  • 2 cups shredded Romaine
  • 1 cup halved Cherry tomatoes
  • 1/2 cup homemade or store-bought Caesar dressing I used Kewpie caesar dressing
  • 1 small red Onion sliced
  • 1/2 cup Croutons
  • 1/4 cup grated Parmesan
  • Juice of 1/2 Lemon
  • 1/2 tsp Black pepper

Method
 

For the chicken
  1. Season the chicken fillets with black pepper, mixed herbs, salt and grated garlic.
  2. Heat a pan with the olive oil and pan fry the chicken fillets till brown and cooked. Set aside
To assemble
  1. In a big bowl, mix in Caesar dressing, lemon juice and black pepper.
  2. Mix in penne, cherry tomatoes, onion and romaine.
  3. Toss well and mix in shaved parmesan.
  4. Top with chicken, cut into chunks and the croutons.
