I have always wished that I am motivated enough to take out my smoothie blender everyday and make a delicious smoothie Mondays to –> Sundays. There have been times when I am so freaking lazy to whip up a smoothie that the berries I purchased would literally go from fresh to dead. And that is at least 5 bucks down the drain. #storyofmylife.
This is likewise the reason as to why I have started buying frozen berries instead. If fresh berries are going at a discounted price, I would purchase a couple of punnet of those and store them in a zip-lock bag, in the freezer.
If you love coconuts and raspberries, this refreshing Vegan Raspberry and Coconut Smoothie has your name written all over it! All it takes is just frozen raspberries, coconut milk, coconut water and honey. If you are not into coconut milk and coconut water (say whuuuut???) you can always use a mix of Greek yogurt and milk OR Greek yogurt and almond milk. But why wouldn’t you love coconut water??? Coconut water is full of nutrients which include calcium, magnesium, phosphorous, potassium and sodium. Personally, I am soooooo in love with coconut water, I can literally swim and drown in them. Nothing beats a glass of chilled coconut water on a blistering day!! This 5 Minutes Orange Julius would be a wholly different thing altogether of course!
The coconut milk adds a very unique taste to the smoothie and the coconut water makes it oh’ so fresh! Did I mention that there is no processed sugar in here? Although I added some honey, you can jolly well use agave, Splenda, etc. Whatever that rocks your boat.
Personally, I think raspberries make the prettiest of smoothies. I mean, look at the color guys? No Photoshop involved, its au-natural. I choose to use frozen fruits for my smoothies because,
- You can purchase in bulk and conveniently store it in the freezer.
- It’s also far less expensive.
- It makes your smoothies thick and frosty.
Smoothies can fill you up, satisfy your sweet cravings and offer you with tons of vitamins and antioxidants. They’re great in the morning to start your day or as a quick pick-me-up during the day. If you are not into smoothie-ing, this Vegan Raspberry and Coconut Smoothie would be a good refreshing start!

- ¾ cup coconut water
- 0.5 cup coconut milk
- 1.5 cups frozen raspberries
- 1-2 tbsp honey (depending on how sweet you like it)
- Add coconut milk, coconut water, frozen raspberries and honey in a blender and blend until smooth.
- Pour into 2 tall glasses and top with a couple of raspberries and a little shredded coconut, if you prefer.
