On my previous visit to Cold storage, I bought a bottle of Tahini as I wanted to give Hummus a try. Hummus is a popular Middle eastern dip. Served with fresh or toasted pita bread, hummus is a great snack/appetizer. It is really easy to make and it makes a nice dip for freshly cut vegetables too. If you can’t find Tahini, just pan roast 1/2 cup of white sesame seeds till fragrant. Remove the seeds from the pan and let them cool completely. Place the cooled seeds in a food processor and add 2-3 tbsp of olive oil. Process till fine.
- 1 can of chickpeas or garbanzo beans
- 3-5 tbsp lemon juice (depending on taste)
- 2 tbsp tahini
- 3 cloves garlic, crushed
- ½ teaspoon salt
- 3 tbsp olive oil
- Some water if required
- Drain the chickpeas and rinse.
- Combine the chickpeas, lemon juice, garlic, salt, tahini, and water in a food processor, and blend to a creamy purée.
- Drizzle with extra virgin olive oil and sprinkle with paprika.
- You can garnish with olives/chickpeas if you prefer.
- Serve with warm pita, flat-breads and sticks of cucumber, celery and carrots..
