A month to Christmas! Who is excited?? *Raises up 2 hands in the air*. Christmas trees, Jack-o-lanterns, turkeys, snowmen and pumpkin spice lattes! Oh, bring it on!
I would usually have a small Christmas get-together with my cousins and I’m so excited to come up with a menu for our dinner. 😀 Anyways, there is still some time for Christmas dinner, so let’s talk about an easy recipe instead.
As the name suggests, this Easy Thai Fried Rice uses very simple ingredients and it is perfect like this. It is authentic using favorite ingredients from Thai cuisine, eg: bird’s eye chilies and nam pla, also known as fish sauce. This fried rice also uses Thai basil which imparts a delicious edge to the dish. Let’s not forget the vibrant color that it gives to this dish too! This recipe is good with chicken or prawns but you can also use squid or slices of beef.
Do give this Easy Thai Fried Rice a try. It is a very straightforward recipe, all cooked up in a single skillet in a matter of 15 minutes or less. If you happen to have leftover rice, making this is the perfect way to use it up. Don’t forget to serve it with a sunny side up cause it makes this Fried Rice even better!

- 3 cups cooked rice (day old is best)
- 300g, sliced chicken fillets (season with 1 tbsp fish sauce)
- 5 garlic cloves
- 6 bird's eye chilies
- 1 tsp sea salt
- 2 tbsp oyster sauce
- 1 tbsp Chinese light soy sauce
- 1 tbsp fish sauce
- 2 tbsp vegetable oil
- 1 small onion, sliced
- 3 cups cooked rice (day old is best)
- 1 cup Thai basil leaves
- Use a mortar and pestle to pound the garlic, bird's eye chilies and salt to a rough paste. You can also use an electric chopper. Set aside.
- Heat oil in a pan. Add the onion and cook for 30 seconds. Then add the garlic chili paste and cook for 2-3 minutes.
- Add the chicken and stir-fry for 3-4 minutes or until the chicken is cooked.
- Add the rice and stir fry for a minute or 2.
- Stir in oyster sauce, fish sauce and light soy sauce.
- Stir-fry until well combined and the rice is evenly colored. Season with more salt if required.
- Toss through the holy basil and remove from the heat.
- Serve with a sunny-side up.
