Easy Thai Fried Rice

Ingredients
  • 3 cups cooked rice (day old is best)
  • 300g, sliced chicken fillets (season with 1 tbsp fish sauce)
  • 5 garlic cloves
  • 6 bird's eye chilies
  • 1 tsp sea salt
  • 2 tbsp oyster sauce
  • 1 tbsp Chinese light soy sauce
  • 1 tbsp fish sauce
  • 2 tbsp vegetable oil
  • 1 small onion, sliced
  • 3 cups cooked rice (day old is best)
  • 1 cup Thai basil leaves
Instructions
  1. Use a mortar and pestle to pound the garlic, bird's eye chilies and salt to a rough paste. You can also use an electric chopper. Set aside.
  2. Heat oil in a pan. Add the onion and cook for 30 seconds. Then add the garlic chili paste and cook for 2-3 minutes.
  3. Add the chicken and stir-fry for 3-4 minutes or until the chicken is cooked.
  4. Add the rice and stir fry for a minute or 2.
  5. Stir in oyster sauce, fish sauce and light soy sauce.
  6. Stir-fry until well combined and the rice is evenly colored. Season with more salt if required.
  7. Toss through the holy basil and remove from the heat.
  8. Serve with a sunny-side up.
