resort Before I share this awesome yet easy chicken stir fry recipe, let me briefly tell you about the fun weekend I had. My uncle rented a resort for all the family members to spend some time together. It was a potluck thingy, thus everyone brought food. We also had a BBQ on Saturday’s evening. Preparations obviously started a few days in advance. All of us had our role to play, but me and my aunt took it upon us in making most stuffs for the BBQ.   Despite a few hiccups in the beginning. everything went on fine in the end. 1) Chatting with cousins.

2) Fanning myself while on the barbie

3) Eating chicken wings

4) Nibbling on corn on the cob

5) Sipping fresh coconut water

6) Repeat 1

 

I adore my cousins, so the time spent were very fruitful indeed.  I came back tired. Tired was an understatement as I was almost dead. Ok, now that might just be an overstatement. Erm, let’s just say I was very very tired and I started feeling a little ill.  It didn’t help that the weather is kinda hazy here in Singapore.   Stop burning the forest people.  That’s not very nice of you. *inserts sad face*  

 

If you guys belong to another part of the world altogether and don’t know what I am taking about. Time for some general knowledge.  For as long I can remember, some farmers in Indonesia have been burning the forest down. Disputes over haze flare up regularly between Indonesia and its neighbours. The smoke caused by rampant slash-and-burn farming in Indonesia often brings certain inconveniences to us especially health wise. When the haze is really bad, you can’t even see the buildings on the opposite side of you which are actually very close. These activities usually end up spreading thick clouds of smoke and haze to Singapore and the neighbouring countries. Quite a lot has been initiated by us, their neighbors, however this has become a regular occurrence through the years because of this unchecked practice as most of them just prefer the cheapest and easiest means to clear the lands without a thought of the harm it is doing, especially to people with asthma and breathing problems.  So yes, It’s kinda hazy here in Singapore, thus a lot of us are under the weather. I was definitely not spared either.   Enough of controversial topics, moving on to something that is loved. Food!

 

As I am typing this post, I just realised that there are certain things that are always on my shopping list when I go groceries shopping everytime. 

  1. Mushrooms
  2. Chicken breast
  3. Peppers
  4. Tomatoes

 

 I LOVE mushrooms. I LOVE Peppers. I LOVE Tomatoes. I LOVE Chicken. How can I not make a recipe out of these ingredients?  This easy chicken stir fry is something that I do when I wanna eat something yummy but I don’t want to spend the next 1 or 2 hours in the kitchen. You know, like on those lazy days where you just wanna rot in front of the pc, aimlessly surfing around and lurking around people’s facebook, yet you think you are too cool to just eat cup noodles? Yes, this dish is specially for those kinda days. <3 So, this is a really simple recipe. You can literally blind fold yourself and cook this.  Okay maybe with 1 eye closed. You know, like a pirate?

  Although I would most eat these on it’s own or with some salad, these can be eaten with rice and pasta or wrapped up in a tortilla!     Chicken-wrap    easy-chicken-stir-fry-salad     For those who are affected by the polluted air, remain indoors. Drink lots of water, take more greens and fruits. They said an apple a day keeps the doctor away, but if the doctor is cute, forget the apple.

Easy Chicken Stir Fry

Ingredients
  • 250 g of inner fillets or 2 chicken breasts - sliced and season with black pepper and salt
  • 10 button mushrooms
  • ½ green pepper - cubed
  • ½ red pepper - cubed
  • 10 cherry tomatoes
  • 4 garlic - chop
  • 1 onion - cut into 6 wedges
  • Chill flakes
  • ½ tsp chicken granules (Optional)
  • Salt and pepper to taste
  • Mixed herbs or any of your favorite herbs
  • Zest of half a lemon
Instructions
  1. Add 2 tbsp of oil in pan and saute chicken slices.
  2. Sprinkle with chill flakes. Fry till slightly golden.
  3. Mix in garlic and saute for another 30 seconds.
  4. Add in the button mushroom, peppers, onions, chicken granules and herbs and cook for a couple of minutes.
  5. Throw in the cherry tomatoes and lemon zest. Add more black pepper or chill flakes if you like it hot.
  6. Cook for another minute.
  7. Serve.
Notes
You can use prawns instead of chicken too.
