In a heavy bottomed skillet, heat 2 tbsp of olive oil over medium-high heat. Add the potatoes to the skillet and season with salt and pepper.
Fry until golden brown and cooked through, around 8-10 minutes, stirring a few times to ensure even browning.
Add the onion and cook for 2 minutes.
Add the sausages and cook this for a couple of minutes.
Mix in chopped garlic and cook for a further 1 minute.
Throw in the peppers, tomatoes, smoked paprika, herbs and salt and cook for a couple of minutes. Serve hot.
