Mini Orange Cakes

Ingredients
  

  • 125 g salted butter
  • 100 g self-raising flour
  • 120 g caster sugar
  • 1 tsp vanilla essence
  • 3 eggs
  • 1 large orange zested and juice

Method
 

  1. In a bowl, cream butter with sugar with an electric mixer, until pale.
  2. Add in eggs, one at a time till fluffy.
  3. Mix in vanilla essence and orange zest.
  4. Fold in half of the flour and mix well.
  5. Add in orange juice and mix in the remaining of the flour.
  6. Scoop batter into greased bundt/muffin pan and fill up to 2/3 full.
  7. Bake for about 20 minutes.
