Lemon Poppyseed Salad Dressing

Ingredients
  

  • 1/2 onion - chopped see notes
  • 1 tbsp olive oil
  • 2 tbsp Greek/plain yogurt
  • 1/4 cup mayonnaise
  • 1/2 tsp lemon zest optional
  • 1 tsp lemon juice
  • 1 tablespoon olive oil
  • 1-2 tsp honey start with 1 tsp and adjust accordingly
  • 2-3 tbsp water
  • 2 tbsp poppy seeds
  • Salt to taste

Method
 

  1. Saute the shallot in olive oil for 2-3 minutes.
  2. In a bowl, place mayonnaise, lemon juice, lemon zest, yogurt, onions (with the oil), honey, and salt.
  3. Add the water to adjust the consistency.
  4. Taste accordingly annd stir in the poppy seeds.
  5. Keep refrigerated.

Notes

If you are cool with consuming raw onions, there isn't a need to saute the onions. Just directly add the onions and olive oil into the dressing.
