Brush the slices of eggplant with 1 tbsp of olive oil. Season with some salt, black pepper and 1/4 teaspoon of dried Italian seasoning and grilled this in the oven for about 10-15 minutes until cooked but not mushy.
While the eggplant is cooking, add the remaining 1 tbsp of olive oil in a frying pan and saute the garlic for 30 seconds.
Add minced beef and saute till cook. Season with salt, black pepper and 1/4 tsp of Italian seasoning.
Once the eggplant is cooked, top with some sauce, minced beef, jalapeno, olives and cheese.
Grill till the cheese melts.
Top with rosemary or basil if desired.
