Easy Oven Baked Lemang

Ingredients
  

  • 1 kg glutinous rice
  • 1000 ml coconut cream + 500ml water OR 1500ml coconut milk
  • 2-3 tsp salt gives the coconut milk a taste. It should taste like saltwater
  • Sheets of banana leaves
  • Empty cans as molds. Cut off the top

Method
 

  1. Wash the banana leaves and wipe them dry. Cut into 15x15 cm squares and 5 cm circles.
  2. Refer to the video above as to how to place the banana leaves in the can.
  3. Soak glutinous rice in water for at least 3 hours or overnight.
  4. In a large bowl, combine coconut cream/milk, salt and water.
  5. Drain the glutinous rice and place it in the coconut milk
  6. Take the lined cans and fill the glutinous rice 3/4 way through and top with coconut milk till slightly above the level of the rice.
  7. Bake at 160 degrees Celcius for 1.5 hours.
  8. If it's not dry as yet, continue cooking for another 20-30 minutes.
