Delicious Fried Laksa

Ingredients
  

To be blended
  • 15 dried chilies cut to remove seeds and soak in hot water for 5 -10 minutes
  • 1 large onion
  • 5 garlic
Other ingredients
  • 3 tbsp laksa paste
  • 300 prawns shelled and deveined
  • 200 g fishcake sliced
  • 250 ml coconut milk
  • 1 lemongrass bruised
  • 800 g laksa noodles
  • 150 g beansprouts
  • A handful of laksa leaves
  • Salt to season
  • Oil
For garnishing
  • Cucumber cut into strips
  • Laksa leaves
  • Hard-boiled eggs

Method
 

  1. Heat 2 tbsp of oil in a pan/wok and sauté blended ingredients with lemongrass for about 10 minutes.
  2. Add laksa paste and sauté for another 5 minutes.
  3. Add prawns and cook for 2-3 minutes.
  4. Mix in the fishcake and fry for a minute. Pour in the coconut milk.
  5. Add the laksa noodles and season with salt.
  6. Once the noodles are well incorporated, add the beansprouts and cook for a further minute.
  7. Mix in the laksa leaves.
  8. Top with the garnishing and serve hot.
