Delicious Edamame Hummus

Ingredients
  

  • 1 cup cooked and shelled edamame
  • 2 tbsp tahini
  • 2-3 tbsp. lemon juice
  • 1 garlic clove peeled
  • A small sprig of coriander. If you are not a fan of cilantro, you can also use rosemary and basil instead
  • 3 tbsp olive oil
  • Salt to taste
  • 1/4 tsp paprika

Method
 

  1. Combine edamame, tahini, lemon juice, garlic, olive oil and herbs in food processor.
  2. Process until smooth. If hummus is too thick, you can add some water or more olive oil.
  3. Place hummus in a bowl. drizzle with some olive oil and top with a sprinkle of paprika.
