American Banana Almond Bread

Ingredients
  

  • 50 g sultanas - soaked in hot water for 10 minutes
  • 175 g plain flour
  • 300 g bananas - mashed
  • 125 g butter melted
  • 150 g castor sugar
  • 100 g sliced almonds
  • 2 eggs
  • 1 tbsp plain yogurt/sourcream
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp vanilla essence

Method
 

  1. Preheat the oven to 170C.
  2. Put the flour, baking powder, and baking soda in a bowl, and combine well.
  3. In another bowl, mix the melted butter and sugar and beat until blended.
  4. Whisk the eggs one at a time and add in vanilla essence.
  5. Add mashed bananas and stir in drained sultanas.
  6. Add in half of the flour mix and stir well.
  7. Mix in the yogurt/sour cream and the remaining of the flour mix.
  8. Stir well and pour into a 22 cm loaf tin and bake for about an hour or till the cake is golden.
