My perfect morning would more or less be like this.
- Wake up
- Wash up
- Take out a jar of overnight oats from the fridge.
- Dig in and feel all good.
Sounds good and easy, right?
Good, yes. Easy, no.
Why? You might ask. Well, I have never liked overnight oats. Warm oats, oat biscuits, oat bars, I like them all but NOT overnight oats.
As uncanny as it may sound, this really bugs me. Overnight oats are huge in the blogosphere and I have noticed all my fellow bloggers literally head over heels in love with overnight oats. I see people making it all the time. On Television, Pinterest, magazines, books…etc. When I said everywhere, I literally meant it. I know that each one of us has a different taste palate, but I can’t phantom the fact that every other human being in this world loves overnight oats but I don’t?? What is wrong with me?!?!? Then I have realized that every other person in the universe loves a Ben and Jerry too and so do I. This implies I am not that weird after all. Right?
Then my inner conscious starts telling me “1 cup of B&J’s Strawberry Cheesecake Ice Cream = 500 calories + 30g fat + 45g sugar VS a big bowl of overnight oats = 245 calories + 15g sugar + 6g fats”. With all those calories and fat… it is not that hard to love B&J.”

Well, talk about being late to the game. No biggies, I was just late to the overnight oats club. Now I have already signed up for a membership in that club!. This was a recipe that I took from a local magazine and I am so happy that I wholeheartedly gave it a try. Milk + Oats + Yogurt + Honey + Peanut Butter. What a great combo of flavors! Creamy + healthy + hearty + delicious and it feels as if I was eating dessert and not merely a healthy breakfast!! How cool is that!
Waking up at 7 or 8 am is a travesty and having to prepare breakfast as well isn’t easy at all. This Peanut Butter Overnight Oats is such a great time saver and it gives you energy from pure and simple ingredients. Although I used peanut butter in mine, you can also use almond butter if you prefer. These oats are not just the perfect breakfast, they are also good for a post-workout treat. I have added a tablespoon of Chia to my overnight oats just to up the nutritional value. Feel free to omit it if you are not a fan of Chia (Say wut????)
Do give this overnight oats a try people. It is the perfect start to your day. I definitely need something to help catapult me out of bed in the morning. Something delicious yet packed with protein and healthy fats. Thanks to this recipe. My life now feels complete. ♥

Ingredients
Method
- In a mason jar or small bowl add almond milk, chia seeds, peanut butter, and maple syrup (or any other sweetener) and stir with a spoon to combine. The peanut butter doesn't need to be completely mixed with the milk as it is nice to get swirls of peanut butter.
- Add oats and stir.
- Cover securely with a lid or plastic wrap and set in the refrigerator overnight.

- Overnight oats will keep in the refrigerator for up to 2 days.
