If you are not from Asia, you might not understand the craze of “Mr Coconut.” The brand originates from Malacca with Thailand descent. Basically, they sell crafted coconut drinks made from fresh coconut.
Now, they have over 30 outlets in Singapore. Some of you might be thinking that it was really ingenious of Mr Coconut to come up with the idea of a Coconut shake. Sorry to burst your bubble but the idea definitely didn’t originate from them. Coconut shake already existed like 20 years ago in Singapore, at least where I used to stay. However, Mr Coconut popularized it quite well and I have to admit they do make one of the best coconut shakes. Kudos to them for that!!
Despite costing, $4+ to $6+ per cup, it does not stop people from forming snaking queues at the shops. Since it indeed tastes good, I am willing to spend that much moolah for a cup too. I mean if it is delicious, why not, Right? But when I have to buy a couple of cups, I feel the pinch. The pinch that eventually resulted in me attempting my own “Mr Coconut.”
So it starts with some fresh coconut; yup both the coconut pulp as well as the water. Some ice cream is added to give it the extra creaminess. Sugar syrup is optional. If you are a fan of the zero percent sugar level, then omit the sugar syrup. For those who really think that there is zero sugar in Mr Coconut, *whispers* there’s already sugar in the ice cream ya.

- Juice and pulp from 1 fresh coconut
- 2 to 3 scoops of coconut ice cream (I used Wall's Asian delight coconut ice cream
- 8 ice cubes
- ¼ cup simple syrup - optional (see notes)
- Place the coconut water and coconut pulp in a blender.
- Mix in simple syrup, if using.
- Add 2-3 tbsp of ice cream.
- Finally, add ice cubes into the blender and blend till smooth.
