Vegan Mango and Orange Smoothie

It’s the beginning of the week again? At the pace in which the days are moving, I am gonna be old and wrinkled in a matter of blinks.

Last week was kinda hectic. A couple of bakes here and there but my favorite has to be this frozen cake for a 5 years old girl birthday. I’m a typical girl and princesses thingy made me EXcited. I guess every little girl dreams of dressing up as a princess on their birthday with that cute little tiara on the head. Making this cake was fun and seeing the birthday girl giggling happily was quite fulfilling.  Frozen cake

Just as I said in my previous post, the weather has been chilly, over here in Sunny Singapore. Most people might be craving for a hot chocolate in this kinda weather. Apparently I do not fit in the “most people category” cause I have been craving for everything smoothie. I was craving for a smoothie made from mangoes and I was going around the supermarkets trying to find mangoes. My cravings can actually get worse than a woman who is 6 months pregnant.

Whenever I think of a pregnant woman craving, I would remember a funny conversation between my late father and mom. Mom used to get cravings for fishball soups when she was pregnant with me. The odd thing was, that fishball soup had to come from a certain restaurant that was FAR from our abode. Mom would turn away the fish ball soup from other eateries. Then one fine day, my late dad asked my mother, “hence the baby (in your tummy) specifically stated that she desires fishball soup from THAT restaurant??” Lol… sarcasm at its best. I love you dad.

So I was craving for something mango-ish and something mango-ish was precisely what I did the moment I laid my hands on the 2 beautiful and juicy mangoes from Australia. Yes Tm, mangoes from Australia! *Grins* Sweet mango + citrusy orange. Dang, this smoothie was totally up my alley. This Vegan Mango and Orange Smoothie is a charmer and it is perfect for a pick me up in the morning, especially if you are inimical early in the morning or if you are suffering from the “let me sleep for another 10 minutes syndrome”. It is amazing how snoozing for 10 minutes would always end up being another 100 minutes of sleep for me. You can tell how disciplined I am.

This smoothie is something that you can lather up after a workout as well. I have made it completely vegan and there is no added sugar in this smoothie as the sweetness from the mango brought substantial sweetness to it. If you are not able to get mangoes that are sweet, you might need to add some sugar or agave to the smoothie. You can also tweak the recipe to your preference. For example, you might want to add a scoop of your favorite protein powder or even add some Greek yogurt or a banana! Just 5 minutes to this amazing and rejuvenating smoothie that is full of vitamins.

Ingredients
  • 1.5 cup orange juice ( I used freshly squeezed orange juice, you can use 100% orange juice in carton)
  • 1 cup mango chunks
Instructions
  1. Place the mango chunks in a ziplock bag and keep it in the freezer for at least 4 hours before making this smoothie.
  2. Alternatively, you can freeze it overnight.
  3. In a blender, blend the frozen mangoes and orange juice. until thick, creamy, and smooth.
  4. Pour into glasses and serve immediately.
