Chicken Tikka Recipe

  • 500g skinless boneless chicken thighs cut into bite size pieces
  • ¼ cup plain/greek yoghurt
  • ¼ cup mint leaves
  • 4 cloves garlic
  • 1 inch piece ginger peeled
  • 2 green chilli
  • 2 tbsp tandoori masala (see notes for a simple masala recipe)
  • Juice of half a lemon
  • A drop of orange coloring
  • Butter/ghee for basting
  • Salt to taste
  • Toppings:
  • Sliced onions
  • Lime/lemon wedges
  • Chopped cilantro and mint leaves
  1. Add the ginger, garlic, green chili, mint leaves and yogurt in a blender and process till smooth.
  2. In a bowl, combine chicken, masala, blended ingredients, coloring and lemon juice.
  3. Marinate for a few hours or even overnight.
  4. Cook under the grill for about 15-20 minutes. Baste with butter/ghee and cook till it is slightly charred around the edges.
  5. Serve warm with rice or roti with some mint chutney or salad.
To make your own Tikka Masala.

1 tsp paprika
½ tsp chilli powder
½ tsp garam masala powder
1 tsp coriander powder
½ tsp black pepper
