As far as comfort foods go, this twice baked potato recipe is definitely among the Top 10 List. Creamy, dreamy and cheesy little boats of goodness. What could be better?
Ingredients
5 baking potatoes, washed
1 tbsp oil (I used sunflower oil)
2 tbsp butter
¼ cup sour cream
½ cup cheddar
¼ cup milk
Salt and black pepper, to taste
Toppings
Bacon bits (I used beef bacon)
A sprig of green onions, sliced
More shredded cheddar
Sour cream
Instructions
Preheat the oven to 180 degrees c.
Rub potatoes with oil and sprinkle with some salt.
Place on a sheet and bake until tender for about 60 minutes.
Place the potatoes on a baking sheet. Rub them with the canola oil and bake for 1 hour, making sure they're sufficiently cooked through.
With a knife, cut each potato in half lengthwise. Scrape ¾ of the insides into the mixing bowl.
Mash the potatoes and add in sour cream, cheese, milk, and season with salt and pepper.
Fill the potato shells with the filling.
Top each potato with grated cheese and bacon bits.
Lower oven to 160 degrees c and bake the potatoes for about 15 minutes.
Once done, top with green onions and serve with sour cream.
