Blueberry Oatmeal Muffins with Granola Topping

Ingredients
  • 1 and ¼ cup self-raising flour
  • ¾ cup old fashioned oats
  • ⅔ cup brown sugar
  • ¼ cup maple syrup
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup milk
  • ½ cup vegetable oil or melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup blueberries
  • 1 cup granola
  • Extra maple syrup for drizzling (optional)
Instructions
  1. Preheat oven to 400 degrees F.
  2. Line a 12-cup standard muffin tin with paper liners.
  3. In a large bowl, combine flour, oats, sugar, baking soda and salt.
  4. In a large glass measuring cup or another bowl, whisk together milk, melted butter/vegetable oil, eggs and vanilla.
  5. Pour mixture over dry ingredients and stir using a rubber spatula just until moist. Add blueberries and gently toss to combine.
  6. Scoop the batter evenly into the muffin tray. Sprinkle with granola.
  7. Place into oven and bake for 15-20 minutes.
  8. Remove from oven and drizzle some maple syrup over each muffin.
