Blueberry Oatmeal Muffins with Granola Topping

- 1 and ¼ cup self-raising flour
- ¾ cup old fashioned oats
- ⅔ cup brown sugar
- ¼ cup maple syrup
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 cup milk
- ½ cup vegetable oil or melted butter
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup blueberries
- 1 cup granola
- Extra maple syrup for drizzling (optional)
- Preheat oven to 400 degrees F.
- Line a 12-cup standard muffin tin with paper liners.
- In a large bowl, combine flour, oats, sugar, baking soda and salt.
- In a large glass measuring cup or another bowl, whisk together milk, melted butter/vegetable oil, eggs and vanilla.
- Pour mixture over dry ingredients and stir using a rubber spatula just until moist. Add blueberries and gently toss to combine.
- Scoop the batter evenly into the muffin tray. Sprinkle with granola.
- Place into oven and bake for 15-20 minutes.
- Remove from oven and drizzle some maple syrup over each muffin.
