Non-Alcoholic Eggnog

Ingredients
  • 4 egg yolks
  • ½ - ⅔ cup of granulated sugar
  • 2½ cups of whole milk or low-fat milk
  • 1½ cup of heavy cream
  • ½ tsp freshly grated nutmeg (optional)
  • 1 tsp of Vanilla Extract
  • ¼ tsp of Ground Cloves (optional)
  • ¼ tsp of Cinnamon
Instructions
  1. Add the cream, milk, cinnamon, clove and nutmeg in a saucepan and bring it to a gentle simmer.
  2. Meanwhile, in a bowl, whisk egg yolks and sugar until the mixture doubles in volume and it’s a nice pale color.
  3. Slowly add about 1 cup of the hot milk mixture into the egg yolk mixture, making sure to constantly whisk.
  4. Add the egg yolk mixture back into the saucepan with the remaining liquid and cook stirring constantly until the mixture is forming little bubbles at the sides. It should almost come to a boil but not a full boil.
  5. Strain the mixture through a fine sieve, add the vanilla and mix well.
  6. You can serve this hot but I personally love it chill so I would keep the eggnog in the fridge for a couple of hours.
  7. Serve with a nice dollop of whipped cream and a pinch of cinnamon.
