Sticky Date Cake

For the cake
  • 275 g medjool dates (seeded)
  • 310 ml boiling water
  • 1 teaspoon bicarbonate of soda
  • 1 teaspoon vanilla essence
  • 50 g butter
  • 110 g brown sugar
  • 2 eggs
  • 150 g self-raising flour
For the sauce
  • 150 g brown sugar
  • 300 ml cream
  • 80 g salted butter
  1. Preheat oven to moderate (180C/160Cfan).
  2. Grease deep 20cm round cake pan; line base with baking paper.
  3. Combine dates and the water in food processor. Stir in soda and keep aside. .
  4. Cream butter and sugar till creamy.
  5. Add eggs and vanilla essence.
  6. Mix in dates.
  7. Fold in flour and pour mixture into pan.
  8. Bake, uncovered, about 1 hour.
For the sauce
  1. Make butterscotch sauce by stirring ingredients in small saucepan over low heat until sauce is smooth and thickened slightly.
To assemble
  1. Once cake is out of the oven, poke some holes in the cake using a skewer.
  2. Drizzle ½ cup of the warm sauce over the cake. Reserve the rest of the sauce to top the cake with when ready to serve.Pour half of the sauce over the cake.
