Sesame Chicken Salad

  • 1 whole Boneless, Skinless Chicken Breasts or rotisserie chicken
  • Salt and black pepper to season
  • 1 tsp olive oil
  • 4 tbsp olive oil
  • 2 tbsp light soy sauce
  • 1 tbsp vinegar
  • 2 tbsp lemon juice
  • 2 cloves Garlic, Minced
  • ½ tbsp minced fresh ginger
  • 1 tsp sesame oil
  • 1 tbsp brown sugar
  • ¼ tsp of crushed red pepper flakes
  • 1 package of lettuce or mixed greens
  • ½ whole red onion, sliced
  • ½ can mandarin oranges, drained
  • 8 cherry tomatoes , halved
  • 1 tbsp sesame seeds, toasted
Instructions
  1. Put 4 tbsp of olive oil, soy sauce, lemon, vinegar, garlic, ginger, sesame oil, brown sugar, and crushed red pepper flakes into a blender.
  2. Blend until completely emulsified. Taste the dressing and adjust to your taste (More vinegar or brown sugar might be needed)
  3. Salt and pepper both sides of the chicken and heat 1 tsp of olive oil in a skillet or on a grill pan. Cook the chicken on both sides over medium heat until lightly golden and cooked through
  4. Let cool slightly and cut into cubes.
  5. Place the cubed chicken into a bowl and pour ⅓ of the dressing over it, tossing to coat.
  6. Sprinkle the sesame seeds over the chicken.
To assemble:
  1. Place the salad greens, sliced onion,and the halved tomatoes in a large bowl. Pour the remaining dressing over the salad.
  2. Arrange chicken, mandarin oranges all over the greens.
  3. Sprinkle with more sesame seeds if desired.
  4. Serve immediately.
