Three Cheese Stuffed Mushrooms

  • 12 whole fresh mushrooms
  • 1 tbsp olive oil
  • 1 small onion - chopped
  • 1 small pepper/capsicum - chopped
  • 2 cloves garlic - minced
  • 200 g cream cheese, softened
  • ¼ cup grated Parmesan cheese
  • ½ cup grated mozzarella cheese
  • Salt and pepper to taste
  • ¼ tsp cayenne pepper
  • A pinch of dried mixed Italian herbs (optional)
  • 2 tbsp of chopped parsley or coriander (optional)
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Spray a baking pan with cooking spray.
  3. Clean mushrooms and remove the stems.
  4. Heat oil in a frying pan and fry the onions and peppers for a few minutes. Add the chopped garlic, dried herbs and saute for another minute. Season with salt and pepper and set aside to cool.
  5. When the mixture has cool down, stir in cream cheese, Parmesan cheese and cayenne pepper.
  6. Using a little spoon, fill each mushroom cap with a generous amount of stuffing.
  7. Arrange the mushroom caps on the baking sheet and top with mozzarella cheese.
  8. Bake for 20 minutes in the preheated oven.
  9. Once out of the oven, top with parsley or coriander.
