Corned Beef Potatoes and Eggs

Ingredients
  • 6 eggs
  • 3 potatoes - boiled and cut into large cubes
  • 1 can of corned beef
  • 2 green chillies - slice
  • 1 large onion - sliced
  • 2 clove of garlic - chopped
  • 1 tsp ground coriander seeds/coriander powder
  • 1 tsp ground cumin/cumin powder
  • Freshly cracked black pepper
  • 2 Tbsp chopped cilantro for garnishing
Instructions
  1. Sauté onions, chillies and garlic till light golden.
  2. Add in the spices and give it a good mix.
  3. Add corned beef and fry for 2 minutes.
  4. Mix in potatoes and season with black pepper.
  5. Place the corn beef mixture in a baking dish. Make indents to break eggs into.
  6. Bake at 180c for 10 -12 minutes depending on how done you like the eggs to be.
  7. Garnish with chopped cilantro and serve with baguette.
