Bread Pudding with Vanilla Sauce

For the bread pudding
  • 6 large Croissants
  • 0.5 cup heavy cream
  • 1.5 cup milk
  • ¾ cup sugar
  • 3 eggs
  • 2 tsp vanilla
For the vanilla sauce
  • ½ cup brown sugar
  • 1 cup fresh milk
  • ¼ cup heavy cream
  • 1 egg
  • 1 tablespoon cornflour
  • 2 tablespoon butter
  • A pinch of salt
  • 1 tsp vanilla extract
For the bread pudding
  1. Preheat the oven to 350 degrees F.
  2. Whisk eggs, sugar and vanilla.
  3. Add in milk and cream. Mix well.
  4. Tear the croissants into pieces and put in a pan/dish.
  5. Pour mixture over croissants and leave to steep for 5 minutes.
  6. Bake for 40 mins or till golden brown.
For the vanilla sauce
  1. Mix all the ingredients in a saucepan and heat over really low heat.
  2. Use a small whisk and continue stirring until sauce thicken and coats the back of a spoon.
  3. Serve with the pudding
You can also use baguette instead of croissants.
Just spread the baguette with some salted butter.
