Vanilla Panna Cotta

- 1½ cups cream
- 1½ cups milk
- 1 vanilla bean
- ½ cup (115 g) caster sugar
- 2½ tsp gelatin powder
- ¼ cup hot water
- Place the hot water in a small bowl and sprinkle the powdered gelatin in.
- Give it a stir and set aside for 5 minutes.
- Split the vanilla and scrape out the seeds. Place both the seeds and the rest of the bean into a saucepan with the cream, milk and sugar.
- Simmer for about 5 minutes, stirring gently.
- Add in the gelatin mixture and turn off flame. Stir till the gelatine completely dissolves.
- Strain the liquid into a small jug, and discard the vanilla bean.
- Pour into shot glasses/molds and refrigerate for at least 4 hours.
