Roasted Tomatoes with Burrata

Ingredients
For the roasted tomatoes
  • 500g cherry/grape tomatoes, halved
  • 2 tbsp olive oil
  • 5 cloves garlic, sliced
  • 3 sprigs fresh thyme
  • ¼ tsp crushed red pepper flakes (optional)
  • Kosher salt and black pepper, to taste
To serve
  • 200g fresh burrata, drained
  • Baguette or any other crusty bread, toasted
  • 2 tbsp basil pesto
  • 2 tbsp olive oil
  • Salt and black pepper, to taste
  • Fresh basil
Instructions
  1. Preheat oven to 200 degrees C.
  2. Arrange the tomatoes in a baking dish. Drizzle with olive oil and toss to coat. Add the garlic, thyme, crushed red pepper flakes, salt, and pepper.
  3. Roast for 20-30 minutes till slightly wilted. Remove from the oven.
  4. Carefully transfer tomatoes to a plate, spreading them out in a single layer.
  5. Place the burrata on top of tomatoes.
  6. Dallop with the pesto and drizzle 2 tablespoons of good extra virgin olive oil all over the plate. Sprinkle with salt and black pepper.
  7. Garnish with some fresh basil and serve with crusty bread on the side!
