Creamy Garlic Butter Clams

Ingredients
  • 1kg white clams
  • 2 tbsp butter
  • 4 cloves garlic, minced/blended
  • A handful of curry leaves
  • 3-4 bird's eye chilli (omit if you prefer it not spicy)
  • 1 large onion, cubed
  • ½ tsp red pepper flakes
  • ½ cup heavy cream
  • Salt to season
Instructions
  1. Soak clams in cold water for at least 30 minutes; drain well.
  2. Melt butter in a pot. Add curry leaves and saute for 30 seconds.
  3. Add garlic and sauce for another 30 seconds.
  4. Mix in onion and bird's eye chilli, if using.
  5. Stir in cream, salt and chili flakes.
  6. Add clams, reduce heat to low; cover, with a lid and cook until the clams have opened, for a few minutes.
  7. Discard any unopened clams.
