Pear and Snow Fungus Dessert

Ingredients
  • 1 large Nashi.chinese pear, peeled and sliced
  • 50g dried longan
  • 20 seedless red dates/jujubes
  • 2 tbsp goji berries
  • 25 g dried snow fungus (soaked in water for at least 30 minutes)
  • 3L water
  • 50g Rock sugar
  • 2-3 pandan leaves
Instructions
  1. Soak the snow fungus for at least 30 minutes. It should be fully immersed in the water. Soak it overnight if you prefer it to be much softer in texture when cooked. After soaking the dried snow fungus, trim away the yellow root portion, which is very tough. Cut/tear the snow fungus into small pieces.
  2. In a medium/large thick-bottomed pot, add the snow fungus, sliced pear, pandan leaves and 3L water. Bring to a boil, and reduce the heat to medium low. Cover and simmer for 40 minutes.
  3. Add the red dates and longan and cook for another 15 minutes.
  4. Finally, add the rock sugar and goji berries.
  5. Let it boil for a few more minutes and you are done. Do adjust the sugar levels according to your own preference.
