In a food processor, add shrimp, ginger, garlic, light soy sauce, oyster sauce and sesame oil. Blend until it forms a paste.
Transfer to a bowl and add pepper, cornflour, and spring onion.
Take 1 heap tablespoon of the prawn paste and place it on a bed of spring roll strips. Coat the balls with the strips evenly. Trim if needed.
Deep fry the shrimp balls until they turn golden brown, about 4-5 minutes. Dish out, drain on paper towels and serve hot with Thai sweet chili sauce or your favorite chili sauce.
