The wedding cake woes, it’s finally over. I had a good time making the cakes and the two tiered wedding cake plus 150 cupcakes all baked, sat and were at peace with each other. Amen to that.  wedding cake

This is the last week of Eid and I am so looking forward to go back to the “normal” routine, without having to worry about guests dropping by randomly when I am in my pjs or oversized t-shirts. Don’t let me get started on the bun right on top of my head. I am also looking forward to start blogging regularly, the moment I am not as busy as popcorn on a skillet. Two to three blog posts a week, that’s the dream for now.

I have been blogging from 2007. February 26 2007, 4.58 pm to be precise. Before you start being all impressed that I actually remember, well I had to go back to my previous blog to check the date. I know that my memory is beyond appraisal, however please appreciate my honesty at least. Three more years to go and it would be a decade of blogging for me.

I have never taken a conscientious effort to blog religiously, till recently. I was never sure if people actually read my blog. *shrugs* This Eid, I met a lot of relatives and friends and for the 1st time in my 7 years of blogging and I have received a very encouraging feedback. It seems that people are trying the recipes and loving it too. I was told to carry on with what I am doing. Infact even at the wedding on Saturday, a few of them came up to me and said that they are constantly reading my blog and I felt humbled. When you are continuously doing something for the passion, it does feel good to be appreciated. This keeps me going somehow. For those of you who bothered to walk up to me, just to tell me that I am doing good with Maya’s Kitchenette, you have actually made my day and have motivated me to carry on with what I am doing. 5 ingredients lemon asparagus

So I am back with Skinny Mondays. It had to take a back seat as Skinny and Eid together are next to impossible. Now that Eid is almost over, it is time to repent for past mistakes. (Read: It is time to throw that butter and soft drinks out of your system) This 5 Ingredients Lemon Asparagus is that kinda dish that would make you feel realllyyyy good. Clean eating and SUPER simple. The kind of meal that you can prepare with your eyes closed. Okay maybe just one of the eyes open. It has a spring mix of flavors. Olive oil, lemon and parmesan are just lovely with asparagus. This would be great as a starter or side dish.

I am a huge fan of asparagus. How do your normally prepare your asparagus? If you leave a comment as to how you would usually cook your asparagus, I would be really grateful and would bake and eat some cookies for you. Pinky promise.

  • 500 g Asparagus
  • 1-2 tbsp lemon juice
  • 1 tbsp olive oil
  • 2 cloves garlic - halved
  • Parmesan
  • Sea salt and fresh ground black pepper to taste
Instructions
  1. Heat a large griddle pan and add the olive oil.
  2. Drop it the garlic halves to infuse the olive oil for 1 minute.
  3. Remove the garlic and add in the asparagus spears and cook for about 3-5 minutes.
  4. Drizzle with lemon juice and season with sea salt and freshly ground black pepper to taste.
  5. Grate/shave some parmesan over the asparagus.
Notes
I added a few slices of lemon in the griddle for presentation purposes. Use less lemon juice if you are going to add the lemon slices too.
