I bought E above book abt 3 months ago, however I only tried 1 of E recipe. E tag line of E book was “The Only Cupcake Compendium You’ll Ever Need” I guess if I were to try 1 recipe in every 3 months, It would indeed be E only book I need. There’s enough recipes to last me for a lifetime!! 😀

Anyways I have been wanting to try this recipe for quite some time now. All E oranges that we have at home was a good excuse to try this recipe. I made 2 different topping for E cupcakes. E original version with E orange syrup and some of these cuties were top with some orange butter cream. It was suuuuuuuuuuuperb! E syrup made E cake really moist. Very pleasant indeed. I loved it and so did my family members.

Ingredients
For the cupcakes
  • 2 large mandarin oranges- deseeded and cubed
  • ½ cup butter
  • 1 cup superfine sugar
  • ½ cup semolina
  • ½ cup almond meal
  • ½ cup self-raising flour
  • 2 eggs
  • 1 tsp vanilla
For the sugar syrup
  • 1 peeled orange rind - Cut into thin strips
  • ½ cup sugar
  • 1 cup water
Instructions
For the sugar syrup
  1. In a pan, bring the sugar and water to a simmer. Add orange strips and boil uncovered for 5 minutes
For the cupcakes
  1. Preheat oven to 160C.
  2. In a saucepan, cover chopped oranges with water and simmer until tender for 15 minutes. Cool. Drain the fruit and puree in a food processor.
  3. Cream together butter and sugar until creamy. Add in eggs, 1 by 1.
  4. Gently stir in the rest of the ingredients, including the orange puree, until well combined.
  5. Spoon the mixture into cupcake cases and bake for 20-30 minutes, until a skewer inserted in the middle comes out clean.
  6. Cool cupcakes for about 30 minutes and then spoon warm syrup onto each cupcake.
  7. Store in an air-tight container.
Notes
Although it is already delicious on it's own, you can also pipe some butter-cream over the cupcakes.
