Honey Garlic Salmon with Warm Chopped Asparagus Salad

Yes, that is how Wikipedia would describe me right now. Since the time my mummy has been sick, I have not felt capable enough to compose decently. Today mom is up and running, however my brain still seems to be sleeping away. *shrug*

I have not been cooking as much, as I was busy packing and unpacking. Yes, I am moving. More about that someday soon. I am missing my usual routine of cooking, shooting, eating and editing. All in that order.

Last night, I felt like cooking something yummy + healthy for dinner. There are certain days when I prefer to eat really clean especially when I know that I have been putting a lot of crap in my body for the past few days. I recalled that I had a pretty chunk of salmon in the fridge and I was brainstorming for a new and simple recipe for salmon.

What’s with salmon? Why does it get more delicious every time? The sweetness of the soy sauce + honey and the little zing from the lemon juice and zest, plus the heat from the ginger and garlic, it hit me right here –>♥

This Honey Garlic Salmon with Warm Chopped Asparagus Salad was just amazing! No, it was beyond amazing.

My mom has quite a finical palate, so it speaks a lot when she was full of praises for this salmon. I know I am constantly telling you how this is delicious and that is delicious. But when my mom confirms that a particular dish is good, then you should know that I’m not kidding.  A thumbs up from mom is just like Gordan Ramsay giving a big nod in affirmation!

I had to serve some vegetables along with the salmon. Yes pink is pretty but we need our greens too, don’t we? I had a bunch of asparagus and initially thought that I should make the utterly delicious 5 Ingredients Lemon Asparagus but I already have the recipe for it over —> here

In my attempt to make something new for the blog, I chopped up some snow peas, peppers and asparagus. I saute some chopped garlic in evoo (extra virgin olive oil), tossed the vegetables, and seasoned with salt, black pepper and a touch of lemon juice. I topped it off with a sprinkle of Parmesan. Dang, that was one of the best decisions of my life. <3

Back to the salmon, it was simple to prepare and when I say simple, I mean REALLY SIMPLE.

Honey Garlic Salmon with Warm Chopped Asparagus Salad

Marinate the salmon fillets, pan fry or bake it and then drizzle some sauce over the salmon just before serving.  I pan fried mine as I wanted a slightly crisp and caramelized top on the salmon. If you are gonna bake instead, you can sear the top of the salmon over medium/high heat for 2 minutes before baking.

This salmon would be delicious over a bed of buttered mashed potatoes too but who has the time to boil and make mashed potatoes on a Monday?? Furthermore this is a skinny Monday post thus we are not going into that direction. (That direction = Potatoes and butter)

Honey Garlic Salmon with Warm Chopped Asparagus Salad

Ingredients
  • 1 lb. salmon fillet
Ingredients for marinade
  • 1 teaspoon garlic, minced
  • ½ teaspoon ginger, minced
  • 3 tablespoons honey
  • 3 tablespoons sweet soy sauce
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • Crushed black pepper and salt to season
For the warm chopped asparagus salad
  • 1 bunch fresh asparagus, cut into bite sized pieces
  • ½ cup diced red bell pepper
  • ½ cup diced snow peas
  • 2 garlic clove, minced
  • ¼ lemon
  • 2 tbsp parmesan cheese
  • Salt and fresh ground black pepper to taste
Instructions
For the salmon
  1. Combine the sauce ingredients and pour half of the sauce on the salmon and marinate the salmon for 15-30 minutes.
  2. Heat a pan with 1 tbsp of olive oil and fry the salmon for 5-8 minutes on each side.
  3. Alternatively, you may arrange the salmon on a greased baking sheet and bake at 350 degrees F for 15-20 minutes depending on the thickness.
  4. For a slightly crisp and caramelized top, sear the top of the salmon over medium-high heat for 2 minutes before baking.
  5. Once cooked, dish and serve hot drizzled with remaining sauce.
For the warm chopped asparagus salad
  1. In a pan, add 1 tbsp of olive oil and saute minced garlic.
  2. Drop in peppers, snow peas and asparagus.
  3. Cook for 2-3 minutes and season with salt and black pepper.
  4. Turn off the flame and squeeze the lemon juice all over the salad and sprinkle with parmesan.

    I’ve grown up on fish and had a LOT of fish dishes… this is definitely one of my absolute favorites. I did use trout because that’s what I had, but otherwise followed the recipe (baked). I was looking for something simple and healthy, and the delicious taste was a bonus. Served with wild rice blend on the side. Thank you for sharing!
