Roasted Tomato Bruschetta

- 1 pint baby/grape tomatoes, halved
- 2 cloves garlic, sliced
- 2 tbsp olive oil
- Salt and freshly ground black pepper
- A few slices of baguette/ciabatta
- 1 clove garlic, halved (for rubbing on the bread)
- 1 tbsp olive oil
- A few basil leaves, thinly sliced
- Heat the oven to 400 degrees F.
- Coat the tomatoes in 2 tbsp of olive oil and season with salt and pepper. Top with the sliced garlic and roast for 20 minutes.
- Char bread on both sides and rub the hot bread with the garlic halves.
- Drizzle with some olive oil and top the toasted bread with the roasted tomatoes.
