A delicious pudding made with chia seeds, coconut milk and fresh mango. Make this the night before and wake up to a delicious and nutritious breakfast.
Ingredients
2 large ripe mangoes
1.5 cups coconut milk
1 cup water
¼ cup chia seeds
Diced mangoes, for topping
2 tbsp agave (You can also use honey or just regular sugar)
A fat pinch of salt
Instructions
Puree mangoes until smooth. Sweeten with a touch of honey if your mangoes are not sweet. (I skipped the honey since my mangoes were already sweet)
Place the mango puree in a mason jar and keep in the fridge.
Mix together coconut milk and water. Sweeten with honey to taste and add a pinch of salt.
Mix in the chia seeds and refrigerate for a few hours or overnight.
If pudding is too gooey the following day, add more coconut milk or water.
