Cranberry Ginger Mocktail

Ingredients
  • 1 cup water
  • ½ cup sugar
  • 1 cup fresh cranberries (plus more for garnish)
  • 1-litre ginger ale
  • Sparkling water - optional (if you prefer your mocktail less sweet)
  • Crushed ice
Instructions
  1. In a saucepan place the water, sugar and 1 cup of cranberries on medium heat.
  2. Cook until mixture starts boiling and becomes thick. With a wooden spoon, mash the cranberries lightly and cook for a further 2-3 minutes.
  3. If you prefer your syrup to be smooth and clear, you can strain the sugar mixture and discard the cranberry bits. I personally prefer to leave the cranberries in there.
  4. On a flat plate, pour some sugar.
  5. Run a wedge of lime or lemon around the edge of the glasses you would be using.
  6. Dip the glass in the plate of sugar.
  7. Place 2 tablespoon of cranberry syrup in each of the glass.
  8. Pour ginger ale into the glasses till ⅔ full.
  9. Add a splash of sparkling water is you prefer your mocktail less sweet.
  10. Garnish with a few cranberries and top with ice.
  11. Enjoy!
