Avocado Egg and Kale Panini

- 4 slices of whole wheat baguette or any bread of your choice
- 1 tbsp olive oil
- 2 eggs
- 1 small onion - chopped
- 1 garlic - chopped
- 5 cherry or grape tomatoes - halved
- 1 cup kale, stems removed and sliced
- 1 avocado
- Salt and black pepper to taste
- A handful of mozzarella cheese
- Heat the oil in a pan and saute the onion and garlic.
- Add the tomatoes and kale and season with salt and black pepper.
- Cook for 2 minutes and transfer these to a bowl.
- Crack the eggs in another bowl and season with salt and black pepper.
- In the same pan, pour the egg mixture and lightly stir till you get scrambled eggs. Transfer this to a plate.
- Mash the avocado in a bowl with a fork and season with some salt and black pepper.
- To assemble
- Spread some mashed avocado on 1 slice of a baguette. Top with the kale and tomatoes, followed by the scrambled eggs.
- Lastly top with some cheese, if using.
- Cover with another slice of bread, and place on a preheated panini press or a grill/frying pan. Each side would take about 90 seconds.
- Serve hot!
