Avocado Egg and Kale Panini

I was in two minds about writing a post today. I was thinking that I might get a bit too emotional. It is not feasible to blog and not mention about my late father who passed away on this date 22nd of September. It has been many years now since he left us and even though I was barely six years old at that time, his memories are pretty fresh in my mind.

My late dad was a remarkable person and I am not only saying this because he is MY dad. Everyone I know have great stories to tell about him. I still remember his overseas friends travelling all the way to Singapore to visit us after getting the news of his demise. One of his friends, who came straight from the airport, was standing at our doorway and sobbing away. Two years down the road, we went to visit his good friends in Mumbai, India and people were still grieving from his loss. The emotions that people portrayed and the things I have heard about him, I know my dad was an absolute gem of a man and I am so proud that my dad was such kind of a person who made a lot of difference to other people lives.

Moving on, I have two confessions to make. First is that I have never eaten kale. I have heard so much about it and I am embarrassed that I haven’t given it a try as yet. It is okay not to have tried that triple-decker chocolate cake with chocolate fudge and sea salt from that famous bakery but something healthy like Kale, you (Read: I) should not have given it a pass. Also known as the “Queen of Greens” kale is a nutritional powerhouse. It is rich in nutrients and supposedly it provides many noteworthy health benefits.
The second confession would be that I do not have a panini press. As much as I wanted a panini press, a waffle maker and a soy bean maker, I am being held down by space constraints. My mom would never understand my obsession with kitchenware + kitchen gadgets. The first question that she asks whenever I buy something new is, WHERE are you going to keep this?

Yes, story of my life.

If the story of your life mirrors mine or you do not want to invest in a Panini Maker, you can still make Paninis without the press/maker.

Aren’t the Paninis stunning? Hei you Panini Maker, you are so not needed to make gorgeous Paninis. Boo!! (Read: I am still sore that I do not have a Panini Press)

Anyways, this Avocado, egg and kale Panini is delicious! Packed with creamy mashed avocados, scrambled eggs, super nutritious kale (Kale is AMAZING and I am already in love) and some cheese. It is not the typical kind of sandwich where you can find at Subway! It is also VERY nutritious. Feel free to omit the cheese, but I am a cheesy person, so I topped up mine with a tiny weeny bit of cheese. There are times when you eat those sandwiches that are filled with mayonnaise and you don’t feel that good after that, if you know what I meant. I felt wonderful after eating these. That’s the power of clean eating.

If you do not have a Panini maker/press, just place these on a grill or a pan and place something heavy on top of the panini to press it down.

I am in love with these Paninis. I know I have said this quite often, But this one is for real, and as a pledge of love for these Paninis, I am going to get a Panini Press.

Even if my mother is gonna nag at me for the rest of the year.

Avocado Egg and Kale Panini

Ingredients
  • 4 slices of whole wheat baguette or any bread of your choice
  • 1 tbsp olive oil
  • 2 eggs
  • 1 small onion - chopped
  • 1 garlic - chopped
  • 5 cherry or grape tomatoes - halved
  • 1 cup kale, stems removed and sliced
  • 1 avocado
  • Salt and black pepper to taste
  • A handful of mozzarella cheese
Instructions
  1. Heat the oil in a pan and saute the onion and garlic.
  2. Add the tomatoes and kale and season with salt and black pepper.
  3. Cook for 2 minutes and transfer these to a bowl.
  4. Crack the eggs in another bowl and season with salt and black pepper.
  5. In the same pan, pour the egg mixture and lightly stir till you get scrambled eggs. Transfer this to a plate.
  6. Mash the avocado in a bowl with a fork and season with some salt and black pepper.
  7. To assemble
  8. Spread some mashed avocado on 1 slice of a baguette. Top with the kale and tomatoes, followed by the scrambled eggs.
  9. Lastly top with some cheese, if using.
  10. Cover with another slice of bread, and place on a preheated panini press or a grill/frying pan. Each side would take about 90 seconds.
  11. Serve hot!
